Bay leaves aid digestion as black recado is a bit spicy. It's used in various Yucatecan dishes. Enjoy!

Roast the tomatoes, onion, and bell pepper.

Blend with the recado, adding salt and pepper to taste.

In a saucepan, cook the ground beef over low heat, breaking it apart as it cooks. Once crumbled, add the blended mixture and 5 or 6 bay leaves.

Let it cook, stirring the meat to mix well with the recado mixture.

Once ready, serve with 1/2 boiled egg on top as shown in the photo.
