Drain apricots, reserve 1/4 c juice.

Cut apricots in 1/4 & set aside.

In a small bowl, whisk the cornstarch, broth,soy sauce and reserved juice until smooth; set aside.

In a large skilled or wok, stir-fry beef in oil for 3min.

Add broccoli & onion; stir-fry 2-3 min longer or until veggies are crisp-tender.

Stir sauce & to the pan. Bring to a boil; cook & stir for 2 Mon or until thickened.

Add tomatoes & reserved apricots; cook until heated through.

Serve over rice.
