Ingredients

  1. 1 canapricot halves
  2. 2 tbspcornstartch
  3. 3/4 cupbeef broth
  4. 2 tbspsoy sauce
  5. 1 1/2 lbboneless beef top round or sirloin steak, cut into thin strips
  6. 1 tbspcanola oil
  7. 2 cupfresh broccoli florets
  8. 1/2 cupchopped onion
  9. 1 cupcherry tomatoes

Cooking Instructions

    Drain apricots, reserve 1/4 c juice.

  2. 2

    Cut apricots in 1/4 & set aside.

    In a small bowl, whisk the cornstarch, broth,soy sauce and reserved juice until smooth; set aside.

    In a large skilled or wok, stir-fry beef in oil for 3min.

  5. 5

    Add broccoli & onion; stir-fry 2-3 min longer or until veggies are crisp-tender.

    Stir sauce & to the pan. Bring to a boil; cook & stir for 2 Mon or until thickened.

    Add tomatoes & reserved apricots; cook until heated through.

  8. 8

    Serve over rice.
