mince onion, garlic, cilantro, and mix with a splash of vegetable oil. heat in medium pot over medium heat and add refried black beans. add lime juice after simmering beans for 5 minutes. continue to simmer on low heat, covered, stirring frequently to prevent burning.

brown ground meat as desired. remove from heat and drain well.

in sauce pan, heat enough oil to cover the bottom. place corn tortilla in pan and cook until bubbly then flip. once the edges of the tortilla are crispy, remove and drain on paper towel lined plate.

cook remaining tortillas the same way gradually adding more vegetable oil as needed. after cooking allow 20 minutes for tortillas to cool.

chop tomatoes and lettuce. assemble tortillas: layer beans, meat, chopped lettuce, tomatoes, and top with cheese. cut tortillas in half and serve.

for adults, try adding crushed red pepper flakes, 1 clove of garlic (minced), and 1/2 yellow onion to the meat as it cooks. when layering tortilla toppings, add beans, meat, sour cream, lettuce, tomatoes, sliced avacado, and cheese.
