Ingredients

8 servings
  1. 20 gflour (optional)
  2. 2eggs
  3. Yaji or spiced suya spice
  4. Yam tranche
  5. Tomato
  6. Chili pepper
  7. Pepper
  8. Lemon grass
  9. Lemon
  10. Salt and frying oil

Steps

  1. 1

    Peel and boil yam in salted water. Allow to cool down in strainer.

  2. 2

    Break eggs, add yaji or spiced suya spice, add flour (optional) and mix well check taste. Set aside.

  3. 3

    Heat oil deep cooled yam into egg mix. The addition of flour however helps the egg mixture to coat well.

  4. 4

    Remove from egg mixture and fry in batches. And out and cool on paper towel. Continue with the other batches until done

  5. 5

    Wash Tomato, deseed pepper and blend. Peel wash and chop onion. Remove the stalk from the lemon grass and chop well.

  6. 6

    Heat oil, add chopped onion. Allow to heat for some minutes. Add your grinded Tomato paste. Add salt, add the chopped lemon grass. Check taste and allow to cook for 3minuts. Serve with you yam Fritters or Yamarita. Garnish with chili pepper
