Pizza Quesadillas

A quick snack that's a fun fusion of pizza and quesadilla.
Not sure what possessed me to add cream cheese, but it is gooooood.

Note: I normally make my quesadillas with burrito size tortillas for the usual "fold over", but in a pinch fajita size tortillas will do. Just use two of them, one for each half. This is what I have pictured here cause I forgot I used up the last of the burrito size. 😂

Pizza Quesadillas

Ingredients

4 servings
  1. 4burrito size flour tortillas
  2. 2 tbsbutter
  3. 1 cupshredded pizza blend cheese
  4. 1/2 cupchopped pepperoni slices
  5. 4 tbspizza sauce - divided
  6. 4 ozcream cheese - softened
  7. 2 tbschopped green onions
  8. 2 tspranch dressing mix (optional)
  9. Optional additional fillings
  10. chopped black olives
  11. minced onion - lightly sautéed
  12. minced bell pepper - lightly sautéed
  13. chopped canadian bacon
  14. cooked beef or Italian sausage

Cooking Instructions

    In a small bowl combine cream cheese, green onions, and ranch mix until well blended. Heat a large skillet over medium heat.

    While skillet heats spread 1 oz of cream cheese mixture on one half of a flour tortilla. Spread pizza sauce over other half.

    Add 1/2 tbs butter to skillet. Swirl to coat as it melts. Place tortilla in skillet cream cheese/sauce side up.

    Sprinkle 1/4 cup shredded cheese over sauce side. Top cheese with 2 tbs pepperoni and any other desired fillings.

    Fold cream cheese side of tortilla over fillings. Gently press together with spatula.

    Cook until bottom is golden brown. Carefully flip and cook until second side looks the same. Transfer to plate. Let rest a few minutes before cutting.

    Repeat with remaining ingredients to make 4 yummy quesadillas. Serve with additional pizza sauce if desired. Enjoy!
