In a saucepan add milk, butter, 1 tbsp sugar. Bring to light simmer.

Cool this mixture to 120' or less

In small bowl. Mix yeast, sugar & warm water. Set aside for 10 minutes until foamy

Add yeast to milk mixture

In large bowl add the 2 cups flour, salt and milk & yeast mixture

Stir until combined. Cover with Saran wrap & towel and set aside Overnight

The next morning form dough into 6 equal patties

Dip each side of muffin in corn meal.

Place on griddle. let rest for 30 minutes

heat griddle to 300'

brown 5-6 minutes each side

cool completely on rack

split with fork. toast. add butter & jam or whatever you like
