Peel (optional) and core apples. Slice into 3-5mm thick pieces.

Soak in equal parts water & lemon juice (with cinnamon and ginger - optional) for 15 min. This preserves the colour & enhances the apple flavour without adding sugar.

Place on baking rack & place in 60°C oven for 5-6 hours.

For long-term storage, freeze in sealable bags for 2 days to pasteurize.
