Ingredients

  1. 1 1/2 cupsugar
  2. 1/2 cupshortening
  3. 2eggs
  4. 1 cupmilk
  5. 1 packagesinstant butterscotch pudding
  6. 1 tspvanilla
  7. 2 cupflour
  8. 1 tspbaking soda
  9. 1 pinchsalt
  10. 2 cupcut up rhubarb
  11. Topping
  12. 1/2 cupsugar
  13. 1/2 tspcinnamon
  14. 1/2 cupcoconut or chopped nuts

Cooking Instructions

    Mix all ingredients.

    Add rhubarb.

  3. 3

    Pour into 9 x 11 greased cake pan.

    Bake at 350°F for 40 to 45 minutes or until toothpick comes out clean.
