Ingredients

  • 1 tbspolive oil
  • 1 largeonion, peeled and finely chopped
  • 1 clovegarlic, peeled and finely chopped
  • 1400g can of Italian plum tomatoes
  • 2 tbsptomato paste
  • 1crushed bay leaf
  • 1Sprinkling of dried Calabrian oregano
  • 1salt and freshly ground pepper

Steps

  1. 1

    Heat the oil in a frying pan.

  2. 2

    Add the onion and garlic and cook for 10 minutes until softened but not browned.

  3. 3

    Add the tomatoes, tomato paste, crushed bay leaf and the sprinkling of oregano then season.

  4. 4

    Stir well to dissolve and disperse the paste, then leave to simmer and reduce until you have a thickish sauce.
