1 tbspolive oil
1 largeonion, peeled and finely chopped
1 clovegarlic, peeled and finely chopped
1400g can of Italian plum tomatoes
2 tbsptomato paste
1crushed bay leaf
1Sprinkling of dried Calabrian oregano
1salt and freshly ground pepper

Steps

Heat the oil in a frying pan.

Add the onion and garlic and cook for 10 minutes until softened but not browned.

Add the tomatoes, tomato paste, crushed bay leaf and the sprinkling of oregano then season.

Stir well to dissolve and disperse the paste, then leave to simmer and reduce until you have a thickish sauce.
