Piadina Stuffed with Speck

In a bowl, toss the baby lettuce with olive oil and a pinch of salt.

In a small skillet, warm each piadina for 2 to 3 minutes per side. After flipping to the second side, place two slices of American cheese on half of the piadina. Once the cheese has melted, transfer the piadina to a plate.

Add two slices of speck and some of the dressed baby lettuce on top of the melted cheese. Spread mayonnaise on the other half of the piadina. Fold the piadina in half to form a half-moon shape.
