Roasted Garlic Mashed Taters

Clean and cut potatoes small enough so they won't take so long to cook. Leave skin on.

Place cut potatoes in enough water to cover them.

Bring to boil and simmer on low till potatoes are soft.

When they're done, drain water and return potatoes back to pot and leave flame on low and stir and start mashing. This will dry out any existing moisture in the potatoes. Make sure you don't burn them.

Separate head of garlic like a flower in bloom.

Drizzle some olive oil, salt and pepper over garlic head and roast in oven at 400 till garlic is soft and mashable. Approx. 45 min.

When garlic is done, let cool before you try and peel the cloves.

Mash them with a fork or knife and mx them into the potatoes.

Cut butter into cubes to make it easier to mix in.

Add enough heavy whipping cream to make potatoes just turn color.

Salt and pepper to taste.
