In medium size caldero add oil, tomato sauce, alcaparrado,sofrito, and sazon.. Cook over medium heat 4 minutes. add all other ingredients and enough water to cover the rice 1 inch above the rice line. Add salt, sazon, and stir to taste.

Bring to boil,then simmer to almost absorbed. Stir gently from bottom to top once or twice. Then continue simmer 10-15 minutes
