Steps

Peel & cut all veggies into very small pieces. Wash poha 1-2 time & remove extra water.

Heat oil in Kadhai. Temper mustard seeds. When it splutter add peanuts. Roast it till golden brown. Add curry leaves & onion. Saute well. Cook it until transparent and light brown color.

Add potatoes, carrots, capsicum & green chillies. Saute well. Cover the lid. Cook it on slow flame until potatoes cooked. Add red chilli, turmeric & salt. Saute all for 1 minutes.

Now add poha. Mix it well. Cook it for 1-2 minute. Add lemon juice. Switch off gas. & cover it for 4-5 minutes.

Serve hot by garnishing beetroot pieces. & coriander Leaves.
