Ingredients

6 servings
  • 1 packagesfrozen cauliflower
  • 1 packagesfrozen peas
  • 2 mediumfresh zucchini
  • 4 largeboiled potatoes
  • 2jars tikka masala sause (I use Patacks brand)
  • 2 cancoconut milk
  • 1 bunchfresh cilantro
  • 3 tbspcurry powder
  • 2 tspcumin
  • 2 tbspsugar (optional)
  • 1Salt & Pepper to taste

Steps

  1. 1

    Put all ingredients (including cilantro) in a large skillet EXCEPT the vegetables.

  2. 2

    Let sauce simmer for 1/2 an hour.

  3. 3

    Add remaining vegetables and simmer until zucchini and cauliflower are soft.

  4. 4

    I serve over basmati rice with homemade naan and mango lassi drinks.
