5 smallsweet potatoes; peeled & finely shredded
1/4 cupchopped onion
1 dashsalt & pepper
1/4 tspbaking powder
1 1/2 tbsporganic buckwheat pancake mix
1egg

add all ingredients together in a mixing bowl.

cook on griddle at 300°F temp 3-4 min each side.
