Ingredients

  1. 4tart cooking apples, such as Granny Smith
  2. 1marcarpone, to serve (if desired)
  3. Syrup
  4. 1 1/2 cupapple juice
  5. 2 tbsphoney
  6. Filling
  7. 4amaretti biscuits, crushed
  8. 2 tbspground walnuts
  9. 2 tbspground almonds
  10. 1 tbspsoft brown sugar
  11. 1 tsplemon zest
  12. 1/2 tspground cinnamon

Steps

    Preheat the oven to 180°C.

  2. 2

    Heat the apple juice and honey together in a small saucepan over low heat, until the honey melts. Set aside.

    To make the filing, combine the biscuits, walnuts, ground almonds, sugar, butter, lemon zest and cinnamon together in a small bowl.

    Core the apples and score the skin around the circumference, so that it splits nestly during cooking. Stuff the apples with amaretti filling and arrange upright in a small baking dish.

    Pour the syrup around the apples and bake, uncovered, for 35-45 minutes until tender. Serve drizzled with syrup, or mascarpone if desired.
