Cooking Instructions

Beat the ricotta, eggs, rum and zest together in a medium bowl. Sift in the flour and baking powder and stir to.combine.

Half fill a large, heavy-based saucepan with oil. Heat the oil to 180°C or until a piece of bread browns in 15 seconds when tested. Carefully drop tablespoon of ricotta mixture into the oil and fry in batches, turning until puffed and golden brown. Remove using a slotted spoon and drain on paper towel.

Serve immediately, drizzled with honey and dusted with icing sugar.
