Turn the grill on high.

Heat a dash of olive oil up on the stove in a thick 20cm or so pan. Add the onions and garlic, sauté until soft. Add in the italian sausage. Once browned, add in the chopped roasted red peppers and minced basil. Shake the pan so the ingredients are evenly spread. Take off of the heat.

Crack 8 eggs into a bowl. Whisk them together lightly. Add in a bit of pecorino for some nice taste. Pour them over the sausage and vegetables. Pop the pan into the oven and cook until golden brown.
