Ingredients

  1. 5-6 tbspoil
  2. 1 tspmustard seeds
  3. 2dry red chillies
  4. 3-4green chillies chopped
  5. 3-4 sprigscurry leaves
  6. 1 Pinchhing
  7. 1/4 cupGreen peas
  8. 1/4 cupchopped valor
  9. 1/4 cupGreen tuvar seeds
  10. 1/4 cupFarsi chopped (french beans)
  11. 1/4 cupCauliflower chopped into florets
  12. 2 tbspcarrots chopped into pieces
  13. 1/4 cuppotatoes chopped into big pieces
  14. 4-5big pieces of suran (yam)
  15. 4-5 piecessweet potatoes peeled and cut into pieces
  16. 2 piecesdrumsticks cut into pieces
  17. 2raw bananas cut into big pieces
  18. 3 cupstomatoes cut into pieces
  19. to tasteSalt
  20. 2medium pieces of jaggery
  21. For making methi gota
  22. 1 bunchmethi leaves
  23. 1 small cup gram flour
  24. 1 Pinchred chilli powder
  25. 1/4 tspdhania powder
  26. 1/4 tsp jeera powder
  27. 1 tspOil for gota
  28. 1 Pinchsoda
  29. to tastesugar
  30. to tasteSalt,
  31. as needed water to make gota dough
  32. as neededOil for frying

Steps

  1. 1

    In a big pan heat oil.Add mustard seeds.When mustard seeds crackle add curry leaves, red chillies green chillies and hing.

    Now add green peas, valor,farsi (French beans),tuvar seeds and saute the veggies for 2-3 minutes.

  3. 3

    Add Cauliflower, carrots and potatoes and stir all the vegetables.

  4. 4

    Close the lid for few minutes and let it simmer.

  5. 5

    Now add pieces of suran,Sweet potatoes,drum sticks and raw bananas and mix the veggies.

  6. 6

    Again close the lid to simmer

  7. 7

    Add tomatoes and salt.

  8. 8

    Mix all the vegetables.

  9. 9

    Now close the lid to allow the tomatoes and all the vegetables to soften.

  10. 10

    Let the tomatoes be soften and thick gravy forms in the Undhiyu.

  11. 11

    Keep the flame on medium.

  12. 12

    In a small bowl mix all the ingredients of methi gota and make a semi thick pakora like batter.

  13. 13

    Fry the methi gota in hot oil and add the got as in the Undhiyu. Mix well.

  14. 14

    Add jaggery.If u wish add red chilli powder according to your child's taste.

  15. 15

    Slow the flame and let a thick gravy form.

  16. 16

    After few minutes Off the flame and sprinkle chopped Coriander leaves.

    U can also pack this yummy Undhiyu for lunch box.

    Serve Piping hot Undhiyu with Puri or bread
