Use store bought shreadded potatoes in a bag, makes this so much easier.

Mix diced onions, season salt and potatoes in a large bowl and one beaten egg.

Heat about 1/2 cup of oil in a iron skillet if you have one.

Use tour hand and pat out a pattie and place in skillet, keep going until the skillet is full.

Flip after 6 mins or until edges are crispy.

Place on wire rack to drain, and enjoy.
