Ingredients

6 servings
  1. 1 tbspghee (clarified butter)
  2. 1large onion about 225 gram
  3. 5large cloves garlic crushed
  4. 2 tspginger grated
  5. 1large green chilli, finely chopped
  6. 1/4 tspeach ground cinnamon and ground cloves
  7. 2 tspground coriander
  8. 1 1/2 tspground cumin
  9. 4cardamom pods, bruised
  10. 5curry leaves
  11. 1medium carrot,chopped
  12. 1medium sour apple,chopped
  13. 1large potato, chopped
  14. 1 canabout 200 grams red lentils(I use brown as I prefer the flavour) drained
  15. 1 litervegetable or chicken stock
  16. 1 tbsptamarind concentrate
  17. 1 tbspfresh lemon juice
  18. 2 cupabout 500 ml coconut milk
  19. 2 tbspchopped fresh coriander

Cooking Instructions

    Heat the ghee in a large pot, cook the onion garlic,ginger,chilli,all spices and curry leaves in ghee until the onion has browned a little and there is a fragrance.

    Add apple, carrot,potato, dhal(lentils) and cook for 15 minutes or until the vegetables are just tender

    Discard cardamom pods and curry leaves

    Blend or process the mixture. in batches until smooth,return to pan, add the tamarind,lemon juice coconut milk and garnish with fresh coriander leaves.

    Make sure the soup is heated through

    I prefer smooth soups but you can puree it to more broth like texture.

    Make a day ahead if you like.

  8. 8

    You can make a chicken stock with 2 large chicken joints and add the chicken for meat eaters.
