Ingredients

  • 2 tbspcrushed pistachio nuts, or pine nuts toasted
  • 1/2Watermelon cut into chunks, rind removed,if not available use different melon
  • 50 gramsfeta cheese crumbled
  • 2 tbspclear runny honey
  • 1 handfulfreshly chopped mint
  • 1 pinchblack pepper

  1. 1

    Toast the nuts in pan until golden brown about 3 minutes, leave to cool

    Cut rind of melon cut into chunks,deseed and arrange in bowl or serving plates.

    Crumble feta over top

    Drizzle honey over,add nuts.
