Ingredients

  • 3 largepotatoes
  • 1/4 cupolive oil
  • 3 tspchopped rosemary
  • 3 tspcrushed garlic
  • 1 tspgarlic salt
  • 1 tspchopped parsley
  • 1 tspgrated parmesan cheese (optional)
  • 1enough oil to cover base of roasting pan
  • 1water for boiling potatoes
  • 2 pinchsea salt

Steps

  1. 1

    Peel potatoes and cut into 8 pieces each

  2. 2

    Boil until potato pieces until tender when pierced with a fork

  3. 3

    In a bowl, combine 1/4 cup olive oil, rosemary, garlic salt, parmesan (if using) and parsley, put aside to infuse flavours while waiting for potatoes

  4. 4

    Drain potatoes and shake about in colander to rough up a bit. Place into a bowl, pour over mixture and gently toss or stir to ensure full coverage

  5. 5

    Add oil to roasting pan, place in preheated oven at 200°C till oil is hot

  6. 6

    Add potatoes to hot oil carefully and place roasting pan back into oven, reduce temperature to 180°C.

  7. 7

    Roast potatoes for 25 minutes, turn potatoes over and sprinkle with sea salt, put back in oven for a further 25 minutes, till golden brown.
