I made this today to have with some barbecued fish, it tasted fantastic. Sauce is also great on fish. Makes roughly 1/4 cup.

Potatoes In Beer & Whiskey Sauce

I made this today to have with some barbecued fish, it tasted fantastic. Sauce is also great on fish. Makes roughly 1/4 cup.

Ingredients

4 servings
  1. 2garlic cloves (finely chopped)
  2. 3 tbspextra virgin olive oil
  3. 1/4 tspsalt
  4. 1 handfulchopped coriander (I added about 2 tablespoons but add as little or as much as you prefer)
  5. 1/4 tspchilli oil (or any hot sauce, chilli powder or even fresh chilli's, add more or less)
  6. 8 smallpotatoes
  7. 1/2chicken stock cube or fish if using the sauce on fish (Optional)
  8. 1 tbspwhiskey (add more to suit your taste)
  9. 2 tbspBeer (add more to suit your taste)

Cooking Instructions

    Peel the potatoes and cut in half.

    Next boil the potatoes as normal with a pinch of salt in the water. Normally takes about 12-15 from boiling point to cook.

    In the meantime start making the sauce.

  4. 4

    Heat the olive oil in a frying pan on a medium heat.

  5. 5

    Add the garlic to the pan and lightly fry for a minute.

  6. 6

    Reduce temperature to low and add the chilli, salt, stock cube (crumble into the pan with your fingers), whiskey and beer. Simmer down for 3-4 minutes (less time required if you prefer the sauce thinner). Stir often.

    Add the chopped coriander. Cook between 1-2 minutes. Stirring often.

    Remove from the heat and set aside.

    When potatoes are done drain well.

  10. 10

    Pour the sauce over the potatoes, mix well and serve.

These potatoes were absolutely delicious! Whisky, beer, and coriander go SO WELL together! I made them with my chipotle maple pork chops, and lemon asparagus, although my favorite part of the meal was the potatoes. I added another teaspoon of whisky and another tablespoon of beer as well as one medium size onion to the sauce and I loved it. I will definitely makes these again!
