Ingredients

  1. 2 cupsugar
  2. 3/4 cupoil
  3. 3/4 cupcocoa
  4. 4eggs
  5. 2 tspvanilla
  6. 2 1/2 cupflour
  7. 2 tspbaking powder
  8. 1/2 tbspsalt
  9. 1confectioners sugar

  1. 1

    Mix all the ingredients together (exclude confectioners sugar). Do not use a mixer because the batter gets very thick; instead use a wooden spoon.

    Put in the fridge for 2 hours

  3. 3

    Set oven to 350° and spray cookie sheet

  4. 4

    Form cookie dough into small balls and roll in confectioners sugar

  5. 5

    Place cookie dough balls on cookie sheet (evenly spaced) and bake for 10 minutes

grind up some espresso beans and add to the mix. gives the cookies a little bit of a kick.
