Potato Stuffed Kielbasa

Ingredients

4 servings
  1. 1 lbfully cooked kielbasa
  2. 2 cupmashed potatos, can be freshly mashed or a good way to use up left over mashed potatos!
  3. 1/2 smallonion chopped
  4. 1/4 cupgrated parmesan cheese
  5. 1/2 tspblack pepper
  6. 3/4 cupgrated pepperjack cheese, or any good melting cheese you like

Cooking Instructions

    Preheat oven to 375

  2. 2

    Cut sausage into 4 pieces. Cut each piece lenthwise and open so they can hold the mashed potato.Place on greased baking dish.

    Fill each sausage with mashed potatos top with chopped onion and pepper add parmesan evenly over each portion and then add the shredded cheese evenly among them.

    Bale uncovered 20 to 25 minutes until hot

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.

My grandma used to make this she uses instant potatoes and hot dogs!! Awesome!!
