Ingredients

  1. 500 gramspeeled hokaido squash (sweet potatoes would work too)
  2. 500 gramschickpeas, canned and drained
  3. 1 tbspor two of flour plus more for rolling
  4. 1squeeze tomato paste
  5. 1salt, pepper, garlic and paprika
  6. 2 tbspolive oil

    Put the squash in a food processor and blitz it up (or you can grate it). Transfer it to a big bowl

  2. 2

    Then, put chickpeas in the food processor and process until chickpeas reach almost like a hummus consistency. Add in flour and seasoning. Then transfer to the same bowl as the squash

  3. 3

    Mix it all well together. Next, flour your hands and roll the mixture into patties, then roll them in some flour. Put the patties on a tray lined with parchment paper

  4. 4

    Then, brush the patties with some olive oil on one side only and sprinkle with salt. Put the tray in an oven preheated to 220°C for about 15 minutes

  5. 5

    After 15 minutes, flip the patties and brush the dry side with olive oil. Put them in the oven for 15 additional minutes

  6. 6

    Serve warm. Enjoy :)
