Bake potatoes in oven set to 425° until done.

Remove from oven and let rest until they are cool enough to handle. Lower the oven temperature to 350°. (The warmer the potatoes the easier the next step will be so I use pot holders to handle the potatoes)

Cut potatoes in half length wise and scoop out the meat of the potatoes into a bowl leaving just a little bit, about 1/8th of an inch, still in the skin.

Mash up the meat of the potato in the bowl with butter, sour cream, salt, and pepper.

Mix in shredded cheese and bacon and stir till well combined.

Evenly restuff all the skins with the mixture and place on a baking sheet.

Place back into the oven and bake at 350° for 25 minutes or until hot all the way through.
