Dutch Butter cake
In the Netherlands this is one of the all time favourite cakes and as traditional as it gets. There are hundreds of variations of it available, but this one is special to me.
This recipe was passed down to me by my mother. We'd spend months trying to figure out the perfect recipe and here it is.

Prior to starting leave the butter outside of the fridge so it can get soft on room temperature. Preheat an oven to 150°C

Put the butter in a large bowl with the flour and sugar. Beat the egg and add half of it to the mix, leave the other half for later. Knead the mix into a supple dough. Make certain that it's smooth and don't knead too long. It's done when it no longer sticks to the side.

Pour the mix into a 25 cm baking tray and spread it out. Now take the rest of the egg and put it as a layer on top. Take the blunt side of fork or knife and draw a diamond shape on it, do it has the traditional shape. Put it into the oven for 30-35 minutes on 150°C. It needs to be on this low or else the result will be either to dry or coarse.

Take the cake out of the oven when its still soft. If it turned hard then you probably overcooked it. Let the cake settle for half an hour and serve it. Enjoy!
