I'm not a fan of oyster sauce so I use my own concoction it's place in this recipe. It reads almost like a BBQ sauce but it doesn't taste like one. You can swap the beans out for broccoli or sliced onion, or leave them out and scatter some chopped scallion / spring onion over instead

Ingredients

  1. Chicken
  2. 1000 gramsboneless, skinless chicken, diced
  3. 40 gramsgluten-free / plain flour
  4. 1/2 tspblack pepper
  5. 1 tbspolive oil
  6. Sauce
  7. 180 mlsoy sauce, see my free-from recipe link below
  8. 6 tbsptomato ketchup
  9. 6 tbsprice vinegar
  10. 3 tbspbrown sugar
  11. 3 clovegarlic, finely chopped
  12. 1.5 tspfreshly grated ginger
  13. 1 tspred pepper flakes
  14. 100 grams (1/2 cup)frozen trimmed green beans
  15. 100 grams (1/2 cup)salted or unsalted cashew nuts

Cooking Instructions

    Mix together the flour and black pepper then toss the chicken cubes in it to coat

    Heat the oil in a frying pan and brown off the chicken

  3. 3

    Whisk the sauce ingredients together and adjust to taste, adding extra sugar or vinegar as desired

    Put the chicken in the slow cooker or a casserole dish and pour the sauce over

    Cook on low for 3 - 4 hours or in the oven on it's lowest temperature (check after 3 hours), adding the frozen beans in the last 15 minutes of cooking time

    Stir through the cashews just before serving

  7. 7

    Serve over rice or noodles
