This is a tasy vegetarian meal, normally done with beef and served with rice. I used pasta as both the heating times for pasta and tofu work out well . :ohyeaah
Cooking Instructions

in a large pan saute onions until soft
- 2
in a large pan cook your pasta to your liking, drain keep warn

When onions are soft add the crushed garlic and bell peppers.cook until slight crisp turn heat down

Add the tofu , cook for about 6 or so minutes.

Sprinkle with paprika and caraway seeds .

chop , seed and core the tomatoes add to the stew ,simmer until soft, season with salt and pepper ,add the coriander.

Add a little water at the time to keep from burning and to get creamy consistency. If you want more sauce you can use some powdered mushroom soup but you have to check your seasoning

do not use canned soup if using , sprinkle a little soup powder over stew and add a little water until you have it just to your liking, if using soup add extra of the mild paprika to maintain a nice reddish to burned orange colour.

It was one of my 8 year old students graduation day today. For Callies' finale, she was charged with teaching her very own class - completely unassisted. While being video taped no less! This is the dish she chose at a moments notice. [i swear these little munchkins literally crave their red and green chiles here!]What I was impressed with was her immediate versitality. She found herself without fresh red and green tomatoes and celery so, she improvised with Rotell and celery seed. Yup! She didn't miss a beat! She also served her dish with baked Jalapeño Corn Bread.
