Ingredients

4 servings
  1. Stew
  2. 3 tbspolive oil
  3. 1 mediumonion, chopped
  4. 5 clovegarlic chopped
  5. 2 1/2inch piece of ginger chopped
  6. 2 smallcourgette ( zucchini ) chopped into cubes
  7. 1 1/2 lbsweet potatoes chopped into cubes
  8. 1 tbspsmoked paprika
  9. 1 canplum tomatoes
  10. 250 mlpear, peach or pineapple juice
  11. 150 gramssmooth peanut butter.

Cooking Instructions

    Gently heat the oil, add the onions and soften them.

    Add the finely chopped ginger and then the finely chopped garlic. Cook until soft

  3. 3

    Add the bite sized chopped chunks of courgette ( zucchini ) and sweet potato, cook until they are almost soft

  4. 4

    Add the smoked paprika and the cayenne pepper, mix gently but well

  5. 5

    Add the canned tomatoes , break them down gently

  6. 6

    Add the smooth peanut butter

  7. 7
