Ingredients

  1. 1 lbpork shoulder, cubed
  2. 1/4 cupgochujang (Korean chili paste)
  3. 1 tbspchili flakes
  4. 6 clovesgarlic, minced
  5. 1 teaspoonfinely minced ginger (substitute a small pinch of ground ginger or allspice)
  6. 1/4 tspblack pepper
  7. 1medium russet potato, chopped
  8. 1/2medium onion, roughly chopped
  9. 4 cupswater
  10. 1 tbspsoy sauce
  11. 1 tspkosher salt
  12. 1 cupchopped cabbage
  13. 1jalapeno or other hot pepper, sliced
  14. 3green onions, sliced (plus more for optional garnish)
  15. Cooked rice for serving, optional

Cooking Instructions

    Add pork, gochujang, chili flakes, garlic, ginger, and black pepper to a bowl and mix by hand to combine. Let sit for at least 15 minutes to marinate.

    Add water, potato, onion, soy sauce, and salt to a medium pot and stir to combine. Add pork mixture and bring to a simmer over medium heat. Cook for about 45 minutes or until pork is fully cooked and tender. Reduce heat if it begins to boil.

    Add cabbage, jalapeno, and green onion. Continue simmering for an additional 10 minutes.

    Serve with hot cooked rice and top with additional green onion if desired.
