Ingredients

  1. 2 1/2 cupleft over pulled pork or store bought pulled pork (like lloyds brand)
  2. 1 1/4 cupwhite or brown rice,cooked
  3. 1 cupcanned corn (or frozen defrosted)
  4. 2 1/2 cupshredded cheddar
  5. 5burrito sized tortillas
  6. 2 tbspcanola oil

Steps

  1. 1

    Heat a large frying pan with the canola oil while you prepare the chimichangas.

  2. 2

    Spoon 1/2 cup of pulled pork down the center of each tortilla. Top with 1/4 of rice.

  3. 3

    Next top with some corn and 1/2 c of the shredded cheese.

  4. 4

    Fold the tortilla like you would a burrito. Fry the seam side down first until golden then flip and fry the other side. Enjoy!!
