Pulled Pork Chimichangas

I had some leftover pulled pork that I froze and defrosted and wanted something easy for dinner. These easy chimichangas were a hit! Serve with sour cream or guacamole if you want. This will be a new favorite way to use leftover pulled pork!

I had some leftover pulled pork that I froze and defrosted and wanted something easy for dinner. These easy chimichangas were a hit! Serve with sour cream or guacamole if you want. This will be a new favorite way to use leftover pulled pork!
Steps

Heat a large frying pan with the canola oil while you prepare the chimichangas.

Spoon 1/2 cup of pulled pork down the center of each tortilla. Top with 1/4 of rice.

Next top with some corn and 1/2 c of the shredded cheese.

Fold the tortilla like you would a burrito. Fry the seam side down first until golden then flip and fry the other side. Enjoy!!
