This will keep in the fridge for about a month. In the Philippines during WWII there was a shortage of tomatoes so bananas were abundant so this ketchup this originated there as a tomato ketchup substitute. This is what I was told.

  1. 1/2 cupripened banana a large one
  2. 1/2 cupbrown sugar, packed
  3. 1/3 cupapple cider vinegar
  4. 1/2 tspgranulated garlic powder
  5. salt

    Cook 1/2 cup mashed ripe banana with 1/2 cup brown sugar in medium saucepan for 2 min.

    stirfry all remaining ingredients into saucepan and bring to a boil. Simmer, stirring often (it may splatter), keep smashing the bananas till done cooking about 10 min. Let cool before using.

Cool! I recently discovered this condiment. Spotted it at a grocery store near my house and it rang some bells from some research I was doing awhile back, so I grabbed a bottle. Never occurred to me it's be so easy to make my own.
