Ingredients

2 hours 30 mins
  1. 2zucchini
  2. 4eggs
  3. 1 cupwhole milk or buttermilk
  4. 1salt
  5. 8 ozRazor Clams or canned clams
  6. 1Small onion
  7. 1 clovegarlic
  8. 1/2 cupItalian bread crumbs
  9. 1/2 cupall-purpose flour
  10. 2 tbspFresh parsley
  11. 1 tbspItalian seasoning
  12. 1 tspbaking powder optional
  13. 1/4 cupolive oil

  1. 1

    Shred the zucchini and place in a strainer with salt for 2 hours.

  2. 2

    Put the zucchini in cloth towel and squeeze out as much liquid as possible.

  3. 3

    Mix everything together except the clams and zucchini.

  4. 4

    Chop up the clams and add them with the juices to the mixture a long with the zucchini. Clams and zucchini always very in moisture content. So, don't be afraid to adjust.

    Fry in electric skillet at 375° or in a pan at medium high heat with oil.
