Coconut Mousse

If you don't have a lot of time and need a last minute desert then is perfect. You can make it just before dinner in all under 10 minutes and then just chill until set. Normally takes about 1 hour to 2 hours to set. The bonus is that there is no cooking involved just put it all together and then set in fridge.

Pour the coconut milk, condensed milk and vanilla extract into a large bowl. Combine together well until smooth.

Dissolve completely the gelatin in the hot water.

Gradually pour the water into the cream mixture and mix well.

Pour the mixture either into individual small cups or into a shallow container.

Transfer to the fridge and chill intil the mousse has set.

Decorate with your chosen topping. I simply added sprinkled powdered sugar on the mousse.
