Ingredients

  1. 1 kgflour (00 with 9 to 12 proteins)
  2. 0.6 lcold water (26°C and with a lot of calcium)
  3. 30 gsalt
  4. 20 golive oil extra vergine
  5. 5 gfresh yeast
  6. 10 gsugar (at 250 C or none if more)

    In a jar, dissolve the yeast in the water.

    In a bowl, mix salt and flour with some energy

  3. 3

    Pour the water on the flour and knead for 10 min.

  4. 4

    Rest the dough for 30 min.

    Split the dough in 6 parts. And rest for 18 hours.

    Then add the oil (and sugar if needed) and knead the dough for 5 min again.

    Put the flour in the table and put the dough upon. Gently push (use the triangle method) the dough to the edge to open and move the air to the border.

    Make sure that you can move the pizza upon the table. Then put quickly salted tomato sauce, bufalo mozzarella, wet basil et etc.

    Wood (static) oven at least at 300 (250) C for 5 (9) min.
