Melt the butter in a saucepan. Do not let it boil.

Add egg yolks, lemon juice, salt and cayenne to blender. Blend on medium until egg lightens in color. (20-30 seconds.)

Turn blender to low and drizzle in melted butter.

Taste test for lemon and salt. Add more as desired.

Blend a few seconds more.

Keep hot and serve within one hour of making. A thermos works well for this.

Serve over poached eggs, fish or asparagus and enjoy!
