Bring to a boil.

Add carrots.

Reduce heat.

Cover and simmer for 30 minutes or until rice is tender and water is absorbed.

Meanwhile, in a skillet, sauté squash, peppers and onion in oil until crisp tender.

Stir into rice mixture.
