Ingredients

  • 2 tbspvegetable oil
  • 1/4 cupchopped onion
  • 2/3 cupchopped green pepper
  • 1 cupdiced yellow summer squash
  • 2 mediumcarrots, cut into 1/4 inch slices
  • 2/3 cupchopped sweet red pepper
  • 1 packages(6 ounces) long grain and wild rice mix

Steps

  1. 1

    In a saucepan, place rice mix, contents of seasoning packet and water as directed on the package.

  2. 2

    Bring to a boil.

  3. 3

    Add carrots.

  4. 4

    Reduce heat.

  5. 5

    Cover and simmer for 30 minutes or until rice is tender and water is absorbed.

  6. 6

    Meanwhile, in a skillet, sauté squash, peppers and onion in oil until crisp tender.

  7. 7

    Stir into rice mixture.

  8. 8

    *This recipe makes about 4 servings.*

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
