Cod with capers, tomatoes and olives
This recipe is a firm favourite with my husband! Quick and easy to prepare.
Steps

Cut the cod into 2 portions and rub with olive oil, salt and pepper.

Oven bake at 200c for 20 minutes or until fish is firm to the touch and flakes.

In a frying pan gently fry crushed garlic for a minute or two.

Add tomatoes, capers, olives and heat through.
- 5
Add lemon juice and salt and pepper.
- 6
Remove cod from oven and top with the tomato sauce.
- 7
Top with chopped parsley.

Serve with new potatoes and broccoli.
