Ingredients

20 minutes
2 servings
  1. 500 gcod (you could use other white fish)
  2. 1large tomato diced
  3. 2 clovesgarlic
  4. Halfa cup black olives
  5. 2 tbscapers drained
  6. Juice of half a lemon
  7. to tasteSalt and pepper
  8. 4 tbsolive oil
  9. 2 tbschopped parsley

Steps

20 minutes
  1. 1

    Cut the cod into 2 portions and rub with olive oil, salt and pepper.

  2. 2

    Oven bake at 200c for 20 minutes or until fish is firm to the touch and flakes.

  3. 3

    In a frying pan gently fry crushed garlic for a minute or two.

  4. 4

    Add tomatoes, capers, olives and heat through.

  5. 5

    Add lemon juice and salt and pepper.

  6. 6

    Remove cod from oven and top with the tomato sauce.

  7. 7

    Top with chopped parsley.

  8. 8

    Serve with new potatoes and broccoli.
