Spaghetti with "Meat" Sauce

Its summertime and I wanted to make a lentil dinner. Usually I make Lentil Stew but its too hot for that. So I wanted to do something else. I found this recipe in my Forks Over Knives cookbook called Spaghetti with Lentil Ragu. This "meat" sauce is based on that recipe. The recipe calls for diced tomatoes but I chose a can of crushed tomatoes to make a sauce. I also put the lentils through a blender to make the lentils more ground meat like . Topping it with cheddar cheese really finished it off perfectly. I hope you'll like it as much as my family did.

Ingredients

  1. 1/2Onion, chopped
  2. 2 mediumCarrots, sliced thin
  3. 1Celery, sliced
  4. 1 tspItalian Seasoning
  5. 1 cupDried Lentils
  6. 15 ozcan Crushed Tomatoes
  7. 1/2 cupItalian Parsley, chopped
  8. 5 mediumFresh Basil Leaves or tsp dried
  9. 1/2 boxSpaghetti Noodles
  10. 1 cupCheddar or Colby Jack Cheese, shredded

Steps

  1. 1

    Note: You can use any vegetables you have. You can also change the cheese to Parmesan if desired.

    Add carrots, celery and onion to pan with 2 tbsp water and saute till onions are cooked and slightly brown. Add water tbsp at a time to prevent burning.

    Add tbsp water and italian seasoning with salt and pepper and stir.

  4. 4

    Add Lentils and water enough to cover lentils. Bring to boil and simmer for 35 minutes. Keep an eye on it and add water as needed. Water should be gone at end of 35 minutes.

    Put water in a pot with shake of salt and heat for spaghetti noodles. Add spaghetti when it boils.

  6. 6

    Scoop half lentils into blender and blend for a minute. Pour back into pan and scoop other half into blender and blend that for a minute. Pour back into pan. Some lentils will be whole. That's ok.

  7. 7

    Add crushed tomatoes, basil and parsley. Stir and simmer 15 minutes.

    If desired, add spaghetti to "meat" sauce and toss OR put spaghetti on plate and scoop sauce on top.

    Plate spaghetti, sprinkle with cheese and serve.

  10. 10

    NOTE: If you want a more saucy "meat" sauce you can add another can of crushed tomatoes or tomato sauce. If you want the sauce to be a little more sweet and tomatoey add in and a few squirts of ketchup

I'm a vegetarian cook. I love to incorporate beans, grains, vegetables, fruit and herbs in my cooking. In trying to be more healthy I also don't use oil or butter to cook and bake with.My recipes are geared to taste great, uses real ingredients that you can get at the grocery store or Sprouts (health food store) and the whole family will love. My family are meat eaters and they eat everything I cook.Enjoy!!
