Cooking Instructions

Spray or coat the inside of a small oven safe bowl with oil. Spray/coat the outside of the tortilla with oil and place in a bowl, kind of pleating so it makes a basket. Cook at 375 for about 10 - 15 minutes. Remove when just browning, it will continue to keep goldening up.

Meanwhile, heat a little oil and butter over medium heat. When it gets a little bubbly, cook spinach until it begins to wilt. Add the shallots after spinach is wilted along with garlic powder, salt, and pepper. Cook another few minutes.

Remove spinach when cooked, and place in tortilla basket. Cook up an egg however you like it in the same pan - you'll get some nice flavor on the egg! I like over-easy to medium cooked. Scrambled or poached is great too! Place in basket over spinach and top off with Tabasco sauce if desired.
