Love Meatloaf with Mac and cheese. I usually stuff my meatloaf with cheese and I was standing there at the stove staring at the mac and cheese and I looked over at my meatloaf mixture and it was like a lightbulb went on in my head!, why not stuff my mac and cheese into the meatloaf? So, I did and boy am I glad I did it. It was so good. Two comfort foods rolled into one sublime masterpiece of flavor!

Ingredients

  1. 1FOR MAC &CHEESE BELOW:
  2. 1 lbelbow noodles
  3. 1 stickunsalted butter
  4. 1 cuphalf and half
  5. 1 cupmilk
  6. 1/4 cupvelveeta,cubed
  7. 1 cupgouda cheese,shredded
  8. 1 cuppepper jack cheese,shredded
  9. 1 cupsharp chedder, shredded
  10. 1salt and pepper to taste
  11. 1/2 tspground mustard
  12. 1 tspworcestershire sauce
  13. 1 tspsazonator total seasoning
  14. 2FOR MEATLOAF: BELOW
  15. 1 lblean ground meat
  16. 1 lbground chuck
  17. 1/2onion, chopped
  18. 1 boxstove top stuffing, chicken flavor
  19. 2eggs, beaten
  20. 1cup water
  21. 1 tbspworcestershire sauce
  22. 1salt and pepper to taste
  23. 1 tbspsazonator total seasoning
  24. 1/2 cupketchup
  25. 1 tbsptomato paste

Cooking Instructions

    Make mac and cheese first.

    Boil noodles 10 minutes, drain and set aside while making cheese sauce.

    In same pot on low, melt butter, then add in milk & half and half. Warm milk slightly then add in Velveeta and Gouda. Stir till melted then add in Pepper Jack, and Cheddar stirring till melted.

    Add in 1 tsp worcestershire, 1tsp ground mustard, 1 Tbl sazon seasoning and salt & pepper to taste.

    Set mac and cheese to the side.

    To make meatloaf.

    In large bowl mix meat, onion, stuffing, water, eggs, Worcestershire, 1 Tbl. sazonator, and salt pepper to taste.

    Combine mixture well and divide in half. Take one half and shape into loaf then make a indention in the middle to make a pocket to hold mac & cheese.

    Scoop some mac and cheese into pocket then flatten out the second half of meat mixture and cover, encasing the macaroni. Make sure to press seam closed all the way around otherwise mac can leak out.

    Mix ketchup and tomato paste. Spoon 1/2 over top of meatloaf and bake for 30 minutes then spoon on the rest and bake another 30 minutes. Bake meatloaf @ 375°F.
