Ingredients

  1. 2green apples
  2. 9 ozpork (about 250 grams)
  3. 1/2 cupcoconut cream (about 120 ml)
  4. 1 1/2 cupscoconut milk (about 360 ml)
  5. 2 tablespoonsred curry paste
  6. 2 teaspoonspalm sugar
  7. 2 tablespoonsfish sauce
  8. 1 1/2 tablespoonsvegetable oil
  9. 1red chili pepper
  10. 3kaffir lime leaves
  11. 1/2 cupThai basil leaves

Steps

    Peel and slice the green apples. Soak them briefly in lightly salted water to prevent browning, then rinse.

    Heat a pan and sauté the red curry paste with vegetable oil until fragrant. Gradually add the coconut cream. Add the pork and apples, then pour in the remaining coconut milk. Season with palm sugar and fish sauce. Simmer until everything is cooked through.

    Add the red chili pepper, kaffir lime leaves, and Thai basil. Stir to combine, then bring to a gentle boil and remove from heat.

    Serve hot. Enjoy with rice or pasta.
