Red Curry with Green Apple

Peel and slice the green apples. Soak them briefly in lightly salted water to prevent browning, then rinse.

Heat a pan and sauté the red curry paste with vegetable oil until fragrant. Gradually add the coconut cream. Add the pork and apples, then pour in the remaining coconut milk. Season with palm sugar and fish sauce. Simmer until everything is cooked through.

Add the red chili pepper, kaffir lime leaves, and Thai basil. Stir to combine, then bring to a gentle boil and remove from heat.
