  • 1 cupOrganic pasta sauce or pizza sauce
  • 1 1/2 cupMozzarella cheese or cheese of your choice
  • 3 tbspOlive oil
  • 1Eggplant

Steps

  1. 1

    Cut your eggplant (circle form)

  2. 2

    Drizzle olive oil or bush over eggplant

  3. 3

    Bake on 370 for 7 min each side

  4. 4

    Add pasta pasta over eggplant

  5. 5

    Add mozzarella over eggplant

  6. 6

    Put back in oven till the cheese is melted
