Ingredients

  1. 4english muffins split and toasted and lightly buttered
  2. 7 largeeggs
  3. 1 tbspcream or milk
  4. 1 tbspchopped chives
  5. 1/2 tspblack pepper
  6. 1 dashsalt
  7. 8 slicecrispy cooked bacon
  8. 1 cupshredded mixed cheeses I used a mix of parmesan, romano,pepperjack and cheddar but any cheese you like will work

Cooking Instructions

    Preheat oven to 450 Line a baking sheet with parchment paper or foil and spray with non stick spray

  2. 2

    Combine eggs, cream, salt and pepper in a bowl and whisk to combine well

  3. 3

    In a large skillet heat either a bit of butter or oil to prevent egg from sticking, add eggs and cook on low heat until just set.

    Have english muffins cut side up on prepared baking sheet. Divide eggs evenly on top of muffin halfs, top with cheese than divide bacon evenly on top cheese

  5. 5

    Bake about 5 minutes just until cheese melts.

    You can use any topping you like in addition to or instead of bacon such as ham or cooked sausage or any sauteed vegs.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
